California Wild Rice, Bacon and Goat Cheese Fritters
“The name says it all… delicious!”
Makes 12 fritters
3 cups cooked wild rice blend
1/2 cup seasoned fine bread crumbs
1 cup goat cheese, crumbled
3 tablespoons fresh chives, chopped
4 slices bacon, cooked and crumbled
3 tablespoons sun dried tomatoes, minced
1 teaspoon salt
1/4 teaspoon cayenne pepper
2 eggs, beaten
5 tablespoons olive oil
3 tablespoons butter, plus extra for garnish
Extra chopped chives for garnishr
Combine rice, bread crumbs, goat cheese, chives, crumbled bacon, sun dried tomatoes, salt, cayenne, and egg. Form rice mixture into twelve round patties.
Heat oil and butter in a heavy skillet over medium-high heat. Working in 3 batches, fry fritters, turning once, until golden brown, about 4 minutes per side.
Garnish each fritter with a thin slice of softened butter and sprinkle with finely chopped chives.
