Pumpkin and Wild Rice Soup

Quick and easy to prepare, this soup is the perfect dish to enjoy on a cold day

Makes 8 servings


Ingredients:
  • 2 cups Wild Rice, cooked
  • 2 Tbsp. Butter or Margarine
  • 1 cup Onion, chopped
  • 4 cup Chicken Broth
  • 16 oz. Pumpkin (can)
  • 1/8 tsp. White Pepper
  • 1 cup Heavy Cream
  • garnish, Chives or Parsley
Cooking Instructions:

Cook wild rice according to package directions.
Melt butter in large saucepan, add onion and cook until light brown.
Stir in broth and pumpkin.
Cook 10-15 minutes, stirring occasionally.
Add wild rice and pepper, simmer additional 10-15 minutes
